After wrapping up our adventures in Port Louis, we returned to the charming town of Grand Baie, Mauritius, to settle back into our daily routine. It was a rainy day with temperatures hovering around 21-24ยฐC, but even the rain couldnโt dampen the energy of the bustling weekend.
A Stop at Super U
Our bus ride back to our accommodations included an essential stop at Super U, the largest supermarket in town. It had become part of our routine to swing by Super U, and we were always on the lookout for snacks, fresh produce, and ingredients that would inspire our meals.
As it was a Saturday, the supermarket was livelier than usual, with various events being held. One of the highlights? A shy tiger mascot handing out snacks! Sweetie was thrilled to receive a little gift from the โtiger,โ and she proudly clutched the snack with her small, chubby hands. She kept saying, “The tiger gave me a present!” Her joy was so pure and contagious, it melted our hearts.

Our culinary explorations continued during our stay in Grand Baie. A few days prior, we had tried a Laotian-style pork barbecue. While it was tasty, it wasnโt quite the flavor we were cravingโit had a stronger porky smell compared to what we were used to in Korea.
So, during this trip to Super U, inspiration struck as we spotted fresh ginger on the shelves. Julie and I immediately thought of Korean-style marinated pork ribs (๋ผ์ง๊ฐ๋น). We picked out lean pork ribs with minimal fat and skin, along with all the necessary ingredients for a proper Korean marinade: soy sauce, sugar, garlic, and of course, ginger.
Back home, we prepped the meat with the marinade, letting it soak up all the flavors for a few hours. The smell alone transported us straight back to Korea, filling us with nostalgia.
